Peanut Butter Collagen Cups

Ingredients:

• 1½ cups almond flour
• 3 scoops CanGro Collagen Powder
• ½ tsp ground cinnamon
• 1 tsp vanilla extract
• ¼ cup pure maple syrup
• ½ cup smooth peanut butter
• ¼ cup milk of choice
• 200 g dark chocolate, melted

Optional Add-ins & Substitutions:

• Use crunchy peanut butter for added texture.
• Swap almond flour for finely ground oat flour if preferred.
• Use oat, almond or dairy milk depending on your preference.
• Add a pinch of sea salt for a sweet-and-salty flavour.
• Top with crushed peanuts, coconut or cacao nibs before the chocolate sets.

Steps:

  1. Line a muffin tin with 8 paper muffin cases.
  2. In a large bowl, combine the almond flour, CanGro Collagen Powder and cinnamon.
  3. Add the vanilla extract, maple syrup, peanut butter and milk.
  4. Stir until a soft, sticky mixture forms. If the mixture feels too dry, add another teaspoon of milk at a time until it reaches a mouldable consistency.
  5. Divide the mixture evenly between the 8 muffin cases and press down firmly to create the base.
  6. Melt the dark chocolate in short intervals in the microwave, stirring between each interval until smooth.
  7. Spoon the melted chocolate over each peanut butter base, spreading it to cover the surface.
  8. Sprinkle with a little sea salt or your favourite topping, if desired.
  9. Refrigerate for 30–60 minutes, or until the chocolate has completely set.
  10. Remove from the fridge and enjoy.
